Ham Muffins 1 lb. ground beef
1/2 lb. ground ham
1 c. soft bread crumbs
2 eggs
1/2 c. plus 3 tbsp. dark Karo syrup
1 tbsp. prepared mustard
1 tsp. salt
1/2 tsp. pepper
1 (20 oz.) can pineapple chunks, drained, reserve 1/2 c. juice
1 sm. bottle maraschino cherries, drained
Blend all ingredients except pineapple chunks, cherries, and 3 tablespoons Karo syrup, but including the 1/2 cup pineapple juice, and fill 12 to 16 muffin cups. Garnish each with 3 small pineapple wedges and 1/2 of a cherry. Pour 1/2 teaspoon reserved syrup over top of each. Bake at 350 degrees for about 35 minutes. Makes 12 large or 16 small "muffins."
