King and Prince Oatmeal Raisin Muffins

1 1/4 c. rolled oats
1 1/4 c. buttermilk
2 eggs
3/4 c. brown sugar
4 oz. (1/2 c.) butter, melted, cooled
1 c. flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. raisins


Combine oats and buttermilk in a mixer bowl and let stand for 1 hour. Add the eggs, sugar and butter. Mix 30 seconds. Add combined dry ingredients and raisins, mix (low speed) about 15 seconds or only until dry ingredients are moistened. Fill muffin tins 1/2 full (line with muffin papers). Bake at 400 degrees for 15 to 20 minutes. Yields 1 dozen.
