Mini Corn Muffins

3 jalapeno peppers
1 sm. onion, cut in half
1 clove garlic
Monterey Jack cheese
1 c. corn meal
2 tbsp. sugar
1 tsp. baking soda
3/4 tsp. salt
4 tbsp. chilled butter
1 c. frozen corn
3 eggs
1 c. buttermilk
Bacon chips

Start food processor. Drop in pepper, onion and garlic. Add corn meal, sugar, baking soda, salt and chilled butter. Process 10 seconds. Take metal blade out. Shred cheese. Put blade back in and pulse a few times. Add corn, eggs, buttermilk and bacon chips. Pulse a few times. Put in pastry bag. Bake on pan 20 minutes at 350 degrees.
