Oatmeal Muffins

1 1/2 c. flour
1/2 c. brown sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 tsp. baking soda
1/4 c. margarine or shortening
1 c. quick oatmeal
1 1/4 c. buttermilk
1 egg, slightly beaten
1 c. chocolate or butterscotch chips


Mix dry ingredients and cut into shortening until mixture looks like coarse meal. Mix in buttermilk, oatmeal, egg, and chips until moistened. Bake at 375 degrees for 20 to 25 minutes. Makes 6 jumbo muffins or 10 regular.
