Oatmeal Muffins

1 c. oatmeal (quick oats)
1 c. buttermilk
1/2 c. brown sugar
1/3 c. vegetable oil
1 egg
1 c. flour
1 tsp. soda
1/2 tsp. salt


Preheat oven to 400 degrees. Combine oats and buttermilk in large bowl. Add sugar, oil and egg to oatmeal mixture. Add dry ingredients; stir until just moistened. Bake 10 to 15 minutes for large muffins or 5 minutes for small (until light brown). Easy to double batter. Keeps well in refrigerator. VARIATIONS: Add chocolate chips (mini are best), blueberries, raisins, banana, be creative!
