Oatmeal Muffins

1 c. oats
1 c. flour
3 tsp. baking powder
1 well beaten egg
1 c. milk
1/3 c. sugar
1/2 tsp. salt
1/4 c. melted shortening


Combine oats, milk, let stand 15 minutes. Sift flour, sugar, baking powder, salt into bowl. Combine egg, shortening and salt into bowl. Combine egg, shortening (melted) and oatmeal mixture. Add all at once to dry ingredients. Stir just to moisten. Bake at 425 degrees.
