Oatmeal Muffins

1 c. regular oats, uncooked
1 c. buttermilk
1/2 c. firmly packed brown sugar
1/2 c. vegetable oil
1 egg, beaten
1 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt


Combine oats and buttermilk in medium mixing bowl, let stand for 1 hour. Add sugar, oil and egg to oat mixture, mix well. Combine flour, baking powder, soda and salt in a large bowl. Make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, fill 2/3 full. Bake at 400 degrees for 20 to 25 minutes or until lightly browned. Yield: 12 muffins.
