Oatmeal Muffins

1 c. rolled oats
1 c. buttermilk
1 c. reg. all purpose flour, sift before measuring
1/2 tsp. salt
1/2 tsp. soda
1 1/2 tsp. baking powder
1/2 c. melted shortening or salad oil
1/2 c. brown sugar, firmly packed or
1/2 c. honey
1 egg, beaten
1 c. vanilla
Yogurt
2 tsp. vanilla
3 tbsp. molasses
1/2 c. walnuts


Combine oats and buttermilk and soak for 30 minutes or longer. Sift flour again with salt, soda, and baking powder. Add melted shortening, brown sugar, and beaten egg to oatmeal mixture and blend thoroughly. Stir in dry ingredients and mix only long enough to moisten. Spoon into greased muffin pans and bake in a moderate oven (350 degrees) for 25 minutes or until brown. Makes 12 medium sized muffins.
