Oatmeal Muffins

1 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 c. quick-cooking oats
1/2 c. brown sugar, firmly packed
1 c. buttermilk
1 egg, beaten
1/4 c. cooking oil

Sift together flour, baking powder, baking soda, salt and cinnamon. Combine oats, brown sugar and buttermilk in bowl; let stand 10 minutes. Add egg and oil; mix well. Add dry ingredients, stirring just enough to moisten. Spoon batter into 2 1/2 inch muffin pan cups, filling 2/3 full. Bake in 375 degree oven for 25 minutes or until done. Makes 12.
