Oatmeal Muffins

1 egg
1 c. buttermilk
1/2 c. brown sugar
1/3 c. vegetable oil
1 c. quick cooking oatmeal
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt


In bowl, beat egg with fork. Stir in buttermilk, brown sugar and oil. Add oats and stir to combine. Sift together flour, baking powder, soda and salt. Add to creamed mixture and stir just until flour disappears. Batter should be lumpy. Fill greased or paper lined muffin cups 2/3 full. Bake in preheated 400 degree oven for 20 to 25 minutes, or until light brown. Immediately remove from pan.
