Oatmeal Muffins With Muscat Raisins

1 c. quick cooking oats, uncooked
1 c. all-purpose flour
2 tbsp. sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/8 tsp. salt
3/4 c. muscat raisins
1/2 c. nonfat buttermilk
1/4 c. unsweetened applesauce
1/4 c. molasses
1 tbsp. vegetable oil
1 egg, lightly beaten
Vegetable cooking spray


Combine first 7 ingredients in a large bowl; make a well in center of mixture. Stir in raisins. Combine buttermilk and next 4 ingredients; stir well. Add to dry ingredients, stirring just until dry ingredients are moistened. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 degrees for 18 minutes or until wooden pick inserted comes out clean. Remove from pans immediately; cool on a wire rack. Yield: 1 dozen.
