Oatmeal Raisin Muffins

1 cup skim milk
1 tablespoon vegetable oil
1/2 teaspoon vanilla
1/4 cup Egg Beaters(r) 99% egg substitute
1 cup raisins
1 cup quick cooking oats
1 cup all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon


Heat oven to 400F. Grease bottoms only of 12 medium muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Beat milk, oil, vanilla and egg. Stir in raisins.

Stir in oatmeal, flour, sugar, baking powder, salt, nutmeg and cinnamon all at once just until flour is moistened (batter will be lumpy). Divide batter evenly among muffin cups. Bake 20 to 25 minutes.
