Oatmeal Zucchini Muffins

2 1/2 c. flour
1 1/2 c. sugar
1/2 c. oatmeal
1 tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 c. chopped nuts
4 eggs
1 (10 oz.) zucchini, finely shredded
3/4 c. salad oil

Mix first 7 ingredients in a large bowl. In a medium bowl, beat eggs slightly. Add zucchini and oil. Add wet ingredients to dry and mix until just moist, batter will be lumpy. Fill muffin tins 3/4 full (grease tins!) and bake at 400 degrees for 25 minutes. Makes 1 1/2 to 2 dozen.
