Orange Date Muffins

1 c. flour
1/2 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt (optional)
1 egg
1/2 c. vegetable oil
1/2 c. orange juice, divided
1/2 c. milk
1/2 c. finely chopped dates, tossed in flour to prevent clumping
1/2 c. nuts, chopped


Sift together flour, sugar, baking soda and salt. Set aside. Beat egg lightly in bowl. Beat in oil, 1/4 cup orange juice and milk. Add remaining dry ingredients, mixing just until flour is moistened. Fold in dates and nuts. Fill greased muffin cups 3/4 full. You can use Pyrex custard cups. Bake at 350 degrees for 25-30 minutes or until wood pick comes out clean. Remove from pan and brush with remaining orange juice and roll in sugar to coat lightly. Makes 6 large muffins or more smaller ones.
