Orange Honey Muffins

1 c. plain flour
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 c. uncooked oatmeal
1 c. orange juice
1/2 c. honey
1 egg
3 tbsp. vegetable oil
1 tbsp. grated orange peel

Mix flour, baking powder, salt and soda; stir in oats. Combine orange juice, honey, egg and oil. Beat until well blended. Add grated peel. Stir just until all dry ingredients are mixed in. Fill well greased muffin tins 2/3 full. Bake at 425 degrees for about 15 minutes or until brown.
