Orange Sour Cream Muffins

6 tbsp. butter, softened
1/2 c. sour cream
1 c. sugar
1 egg
2 tbsp. + 2 tbsp. orange juice
2 tbsp. grated orange rind
1/2 tsp. orange extract
1 1/4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. chopped pecans

Cream butter & sugar. Beat in egg. Fold in sour cream, orange juice, rind and extract. Sift dry ingredients; add to orange mixture, blend well. Stir in pecans. Fill greased muffin pans 1/2 - 1/3 full. Bake at 375 degrees for 12 minutes.
