Peanut and Jelly Muffins For 12 muffins you will need:
1 egg
1/2 c. milk
1/4 c. butter, melted
1 1/2 c. all-purpose flour
1/2 c. granulated sugar
2 tsp. baking powder
Dash salt, optional
3/4 c. chopped peanuts
12 tsp. of your favorite jelly or jam, strawberry, apricot, raspberry
Beat egg. Stir in milk and melted butter. Sift together flour, sugar, baking powder and salt, if used. Blend together flour and egg mixtures. Add 1/2 cup of the nuts. Pour batter into microsafe muffin pan, filling only 1/3 way to the top. Drop 1 teaspoon jelly or jam in center of each muffin. Spoon batter over filling. Sprinkle with the remaining nuts. Microwave muffins, 6 at a time, at MEDIUM HIGH power for 4 to 5 minutes. Let rest for 2 minutes before removing. Repeat with remaining batter. Serve warm or at room temperature.
