Pumpkin Apple Muffins 1 c Unbleached flour
2 tb Unbleached flour
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1/2 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Cloves
1/8 ts Ginger
12 ts Granulated sugar
2 tb Applesauce -- at room temperature
1 Egg white -- whipped
1 ts Vanilla
1/2 c Pumpkin
1 sm Apple -- peeled/shredded
1/4 c Raisins
Preheat oven at 350. Prepare 6 muffin tins with cooking spray and flour.
In a mixing bowl, combine flour, baking powder, baking soda, salt,
cinnamon, nutmeg, cloves, ginger, and sugar. In another mixing bowl,
combine applesauce, egg white, vanilla, pumpkin, apple, and raisins. Mix
dry ingredients with wet ingredients just until moistened. Use an ice cream
scoop to fill muffin tins two thirds full. Bake, 35 minutes or until
browned.
