Pumpkin Muffins

1/3 Cup brown sugar
2/3 Cup nonfat dry milk
1 Tsp. baking soda
1 Tsp. cinnamon
1 Tsp. pumpkin pie spice
4 Tbsp. raisins
1 Tsp. vanilla
1/2 Cup grated carrots
1 Cup canned pumpkin
2 eggs

Mix wet ingredients. Mix dry ingredients. Fold together. Bake at 350 degrees for 30 minutes or until lightly brown and firm. Makes 12 muffins. (Spray muffin pans with non-stick spray. This will not work as well with baking papers.)
