Pumpkin Muffins

3/4 c. margarine, softened
3/4 c. sugar, white or brown
1/2 c. sour cream
3/4 c. flour
1/2 tsp. salt
1/2 c. raisins or walnuts
2 eggs
1 c. pumpkin or applesauce
1 tsp. cinnamon
1 tsp. soda
3/4 c. oatmeal


Beat together the margarine and sugar. Add eggs one at a time. Add pumpkin or applesauce. Mix in sour cream and cinnamon, then mix in flour, soda and salt. Mix thoroughly. Then add oatmeal and the raisins or walnuts. Bake in 18 lined muffin pans and 350 degrees for 20 minutes. At high altitude bake between 350 and 375 degrees and add an additional 2 tablespoons of flour or oatmeal to batter. *If sweetened applesauce, use 1/2 of sugar.
