Pumpkin Pecan Muffins

1 1/4 c. quick or old fashioned oats
1 c. flour
1/3 c. chopped pecans
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. canned pumpkin
3/4 c. packed brown sugar
1/2 c. oil
1/4 c. milk
1 egg
1 tsp. vanilla
1/4 c. oats
1/4 c. flour
1/4 c. brown sugar
3 tbsp. chopped pecans
1 tsp. cinnamon
1/4 c. margarine or butter, softened


Grease 18 muffin cups. Combine first 8 ingredients. Add pumpkin, brown sugar, oil, milk, egg and vanilla, stirring just until moistened. Fill cups 3/4 full. Combine remaining ingredients. Sprinkle over the muffin batter. Bake 400 degrees for 15 to 20 minutes. Serve warm.
