Raisin Bran Buttermilk Muffin

1 1/2 cups all-Bran(r) Cereal
1 large egg -- beaten
3 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup whole wheat flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons raisins -- chopped

In bowl, stir buttermilk into cereal; let stand for 5 minutes or until cereal is softened. Beat in egg, oil and vanilla extract.

In large bowl, combine flour, sugar, baking powder, baking soda and raisins. Add buttermilk mixture; stir just until combined.

Spoon into 12 nonstick or paper-lined medium muffin cups. Bake in 400°F. oven for about 20 minutes or until firm to the touch.

Makes 12 medium muffins.
