Raisin-orange Muffins

1 c. whole wheat flour
1/2 c. uncooked rolled oats
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground allspice
2/3 c. skim milk
2 eggs, slightly beaten
2 tbsp. vegetable oil
1 tsp. grated orange peel
1/4 c. raisins


To Microwave: In large bowl, combine flour, oats, sugar, baking powder, salt and allspice. Make well in center. In small bowl, combine milk, eggs, oil and orange peel. Pour into flour mixture, stirring just until moistened. Batter will be lumpy. Fold in raisins. Line 6 microwavable muffin pan cups with double paper liners. Spoon batter into each cup, filling half full. Microwave at HIGH 2 to 4 1/2 minutes or until top springs back when touched. Rotate dish 1/2 turn halfway through cooking. Let stand 5 minutes. Remove from pan. Repeat procedure with remaining batter. Makes 12 muffins.
