Rhubarb Bran Muffins

1 c. All Bran cereal
1 c. soured milk (1 tbsp. vinegar plus milk to equal 1 c. Let stand 10 to 15 minutes.)
1 egg
1/2 c. vegetable oil
1 1/2 c. flour
3/4 c. brown sugar
1 tsp. soda
1 1/2 c. rhubarb, finely diced
Cinnamon and sugar

Put cereal and milk in mixing bowl; stir and let stand a few minutes to soften cereal. Add egg and oil and mix well. Combine flour, brown sugar and soda in another bowl. Add dry ingredients to bran mixture; stirring only until combined. Add rhubarb and stir only enough to distribute evenly. Put batter into greased muffin cups. Sprinkle with sugar and cinnamon which have been mixed together. Bake at 400 degrees 25 minutes until brown. Makes 12 medium or 8 large muffins.
