Rhubarb Muffins

1 1/3 c. brown sugar
2/3 c. oil
1 egg
1 tsp. salt
1 c. sour milk
2 1/2 c. flour
1 tsp. soda
1 tsp. vanilla
1 1/2 c. rhubarb, finely chopped


Mix all except rhubarb, fold in last. Fill muffin cups 3/4 full. Bake 20 to 25 minutes. This may be made into bread by increasing rhubarb to 2 cups. Bake at 350 degrees 45 minutes.
