Rhubarb Muffins

3/4 c. brown sugar
1/3 c. vegetable oil
1 tsp. vanilla
1/2 tsp. soda
1 - 1 1/2 c. finely chopped rhubarb
1 egg
1/2 c. buttermilk
1 1/2 c. flour
Pinch of salt
Cinnamon & brown sugar


Mix brown sugar and egg; then add oil, buttermilk, flour, soda and salt. Stir in rhubarb and pour into greased muffin tins or paper baking cups. Sprinkle tops with a mixture of brown sugar and cinnamon. Bake at 350 degrees for 20 to 25 minutes.
