Scotch Oatmeal Muffins

1 c. buttermilk
1 c. quick cooking rolled oats
1 egg, beaten
1/2 to 2/3 c. brown sugar
1/3 c. cooking oil
1 c. flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon

In large bowl combine oats and buttermilk and let soak for 15 minutes. Stir in beaten egg, oil and brown sugar. Mix well. Sift together the dry ingredients, add to oats mixture and stir only until blended. Put in 12 muffin cups, bake at 400 degrees for 20 to 25 minutes or until golden brown.
