Spicy Apple-Bran Muffins

1 c Plain nonfat yogurt
1 c Chopped apple (about 1 medium)
1/4 c Frozen (thawed) apple juice concentrate
1/4 c Egg substitute or cholesterol-free egg product
3 tb Vegetable oil
1 c Oat bran
1 c All-purpose flour
1/4 c Granulated sugar
3 ts Baking powder
3/4 ts Ground cinnamon
1/4 ts Salt
1/4 ts Ground nutmeg
1 tb Packed brown sugar

Heat oven to 400 degrees. Spray 12 medium muffin cups, 2-1/2 X 1-1/4 inches, with nonstick cooking, spray or line with paper baking cups. Mix yogurt, apple, apple juice concentrate, Egg Substitute and oil in large bowl until blended. Stir in remaining ingredients except brown sugar all at once just until flour is moistened. Fill muffin cups about 7/8 full. Sprinkle with brown sugar. Bake 20 to 24 minutes or until golden brown. Immediately remove from pan. 12 MUFFINS.
