Spicy Peach Muffins

4 1/2 c. flour
1 tsp. salt
4 1/2 tsp. baking powder
3/4 c. granulated sugar
3/4 c. brown sugar
1/2 tsp. nutmeg
1 tsp. cinnamon
2 eggs
3/4 c. vegetable oil
1 1/4 c. milk
2 peaches, halved, pitted & diced or canned equivalent

Set the oven at 400 degrees and prepare 18 muffin cups. In mixer bowl, combine flour, salt, baking powder, white and brown sugars, nutmeg and cinnamon. Mix these dry ingredients with the beaters until they are just combined. Add eggs and oil and put mixer on medium-low speed. Pour in milk gradually until all is added. Remove beaters from bowl and stir in diced peaches. Use a soup spoon to fill the muffin cups so that they are full. Bake for 25 to 30 minutes or until firm and browned. Set on rack to cool.
