Strawberry Orange Muffins 1 Egg
1 sm Orange; grated*
1 c Strawberries; fresh or frzn not in syrup
1/2 c Milk
1/2 c Sour cream
1/3 c Oil
3/4 c Sugar
1 c Walnuts; chopped
2 1/4 c Flour
1 tb Baking powder
1/2 ts Salt
*Use juice, peel, and fruit. In the large bowl of an electric mixer, beat
first 8 ingredients until blended, about 30-45 seconds. Add remaining
ingredients and beat just until dry ingredients are moistened. (Do not
overbeat)
Divide batter between 18 paper-lined muffin cups and bake in a 400 degree
oven for about 22-25 minutes or until muffins are lightly browned and a
cake tester, inserted in center, comes out clean. Allow to cool for 10
minutes, remove muffins from pans, and continue cooling on a rack. Brush
tops with Strawberry Orange Glaze for a lovely touch. Yields 18 muffins.
For Glaze: Stir together all ingredients until blended. NOTE: Be certain
not to overbeat the batter when you add the flour. Simply beat for about 30
seconds or until dry ingredients are moistened.
