The Perfect Muffin 2 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt
1 egg
1 c. milk
1/4 c. Crisco, melted
Heat oven to 400 degrees. Grease muffin cups. Sift flour, sugar, baking powder and salt into a bowl. Make a well in center; add egg, milk and melted Crisco. Stir just to moisten dry ingredients. Batter will be lumpy. Fill muffin cups about 2/3 full. Bake about 20 minutes or until golden brown. Loosen with spatula; remove from pan. Cool on wire rack. NOTE: The secret in making muffins is the stirring. You should stir only until the dry ingredients are dampened. The batter should be lumpy. When done, the muffins should be rounded on top, pebbly in appearance, and have no tunnels or holes inside. Muffins are at their best served warm.
