Broccoli Muffins

1 3/4 c Flour
1 c Quick-cooking oats
1/4 c Sugar
2 ts Baking powder
1/4 ts Salt
1 c Milk
1/3 c Vegetable oil
1 Egg, lightly beaten
1 c Chopped fresh broccoli, blanched
1/2 c Shredded cheddar cheese

In a large bowl, combine flour, oats, sugar, baking powder and salt. In a small bowl, mix milk, oil and egg. Stir into dry ingredients until just moistened. Fold in broccoli and cheese. Spoon into greased or paper-lined muffin cups. Bake at 400 degrees F for 18 to 20 minutes or until top springs back when lightly touched.
