Chocolate Chip Muffins

3 tb Shortening
3/4 c Brown sugar
1 oz Tofu, mashed
2 ts Baking powder
1/2 ts Salt
1/2 ts Cream of tartar
3/4 c Water
1 c Chocolate chips
2 c All purpose flour

Cream together the shortening & brown sugar. Add the tofu. Mix in the baking powder, salt & cream of tartar. Mix thoroughly. Slowly blend in the water. Stir in the chocolate chips. Add the flour a cup at a time, mixing well after each addition.

Spoon batter into oiled muffin tins. Bake in a preheated 350 degrees F oven for 20 to 25 minutes, or when the tops are lightly browned.
